Boscaiola Rice Bake

Step 1
Heat oil in a large, deep, ovenproof frying pan over medium heat. Add bacon and cook, stirring occasionally, for 5 minutes or until browned and crisp. Using a slotted spoon, transfer bacon to a bowl.

Add onion and mushroom to the pan and cook, stirring, for 2-3 minutes or until onion starts to soften. Add cream and mushroom sauce, and bring to a simmer. Simmer for 1-2 minutes or until reduced slightly. Season.
Step 3
Squeeze the packets of rice to separate the grains. Add rice and peas to the onion mixture and stir to combine, breaking up any large lumps of rice with a wooden spoon. Stir for 2-3 minutes or until the rice is heated through. Stir in two-thirds of the bacon and smooth the top.
Step 4
